White Coats and Still Candles

All of us, who had the priviledge of knowing Charlie Trotter, have searched during these last few days for some way to say goodbye and express our deep thanks to this remarkable culinary talent.

As a chef, he amazed and delighted diners. As a teacher, he led and inspired. As a colleague, he shared and supported.

How do we say goodbye to such an individual, one who gave so much to so many and who left us far too soon? Perhaps with still white candles in the evening and crisp white jackets in the morning.

Charlie would so approve... and, with a radiant smile, understand.

Charlie Trotter - How you will be missed! You reminded us all with flare and passion that our profession is an art, not a craft - one to be both savored and shared. Thank you for all the courage and wisdom that you shared with so many. It was an honor to call you a friend and a colleague.
